Story

JIE Coffee

Daddy Jie has been a coffee lover for many years, and he believes a lot more goes into making a good cup of coffee than just the beans itself.

Wanting to share the love for coffee with others, he started a small shop roasting and grinding coffee on his own. As cost started to increase in Singapore, Daddy Jie decided to move to Malaysia where he could continue providing quality traditional coffee at a lower cost for his customers. Till date, Daddy Jie still insists on personally roasting coffee the traditional way no matter rain or shine, enduring pain and injury to ensure and deliver the best for his customers.

Daddy Jie roast his coffee beans on weekdays and only comes into Singapore during the weekends to sell and deliver his coffee. You may have come across Daddy Jie and Mummy at Teck Whye, Ghim Moh, Chong Pang, Bukit Batok etc manning their little store together, enthusiastically selling and sharing their love for coffee.

Prefect taste

Brew

Getting the perfect brew requires experimenting as different people have different preference in taste.

Daddy Jie's perfect brew

Brew: French press

Coffee: Medium grind size

Ratio: 21g of coffee to 300ml of water

Time: 2.5 mins

Temp: 95 degrees

A Bitter taste means the coffee was over-extract, due to:

  • Grind size too fine

  • Brew time too long

A Flat taste means the coffee was under-extract, due to:

  • Grind size too thick

  • Brew time too short

  • Temperature of water too low

Different ways of brewing, different timing will give different taste so experiment away till you find your very own perfect brew.

"I was at Chong Pang and was surprised to find this stall set up at the market. The couple was very enthusiastic about their coffee. After sampling some of his coffee, I bought 250g from him. I liked the coffee."
